Apple Pie with an African Twist!

Monday, December 21st, 2009

I just had to let you all in on this yummy recipe sent in by Ava from Apple Pie Recipes!

Amarula Cream Apple Pie
1 Premade Double Crust Pie Pastry
6 Cups Of Chopped Skinless Green Apples
1/2 Cup Of South African Amarula Cream Liqueur
1 Tablespoon Of Fresh Squeezed Lime Juice
1/2 Cup Of  Unfiltered Apple Juice
2 Tablespoons Of Softened Unsalted Real Butter
2 Tablespoons Of Pure Cornstarch
1/2 Cup Of White Granulated Sugar

Serves 8, 445 Calories Per Serving, 12 Grams Of Fat

Line a nine inch (22cm) pie pan with the bottom crust layer. Preheat your oven to 400 degrees F, or 205 degrees C. Put the chopped skinless green apples, unfiltered apple juice, and sugar in a saucepan and heat the ingredients over medium heat, stirring until the apples become slightly tender. Next remove the saucepan from the burner, and then thoroughly stir in the South African Amarula Cream Liqueur, lime juice, pure cornstarch, and one tablespoon of butter. As the pie filling cools stir it continuously until it begins to thicken. Spoon the thickened pie filling into the pie pan, then cover it with the top crust layer. Tightly flute the edge of the crust together, then make several incisions in the top of the pie so that it can breath. Next evenly spread the remaining tablespoon of butter over the top of the pie crust, then sprinkle it with a little leftover sugar. Bake for roughly twenty minutes, or until the crust is golden brown. Serve it warm.

The 10 Do’s and 5 Dont’s of Namibia Budget Travel

Monday, December 14th, 2009

A short list of Namibia travel Do’s and Don’ts from the expert Crew on the ground.

duneDO:
-  Buy your crystals and semi precious stones; they are cheap and ALL over the place!
-  Take a warm jacket – it may be a desert but it does get chilly at night
-  Visit during October for a real German October Fest!
-  Search for wild horses, they are rare but there
-  Visit an old diamond town such as Kolmanskop
Quad bike! (No experience necessary!)
-  Hike up Dune 45 JUST before sunrise for the best view in the world
-  Take plenty of sun cream and a sun hat at all times of the year
-  Take balloons for the local children (obviously not pre blown!)
-  Spend the day with the Himbas or the Bushmen

DON’T:
-  Spend more than a day in the capital, Windhoek. So much more to see….
-  Hike in the Fish River Canyon between November and March, it is waaaay too hot!
-  Give money to the locals if they beg, rather buy a little food and give it to them. Giving money only encourages begging.
-  Wander off too far in Spitzkoppe or the Sossusvlei dune fields – everything looks very similar and you may never find your way back!
Be a chicken – try out the quad biking, sand boarding and sky diving in Swakopmund.

Friday, December 11th, 2009

I love Namibia – no seriously – I LOVE IT!

Huge expanses of desert sand looking like caramel ice cream as far as the eye can see and the rugged coast steeped in the history of violent seas and shipwrecked sailors. Ancient tribes people talk with clicking tongues and cover themselves not with clothes, but with mud. I could go on…. and on…
